What you'll do...
- Work a fully flexible shift pattern to support the needs of the operation, this will include regularly working early shifts, closing shifts, weekends and public holidays.
- Take ownership of Health & Safety across all Back of House areas.
- Maintain a clean, food-safe working environment by carrying out daily walkarounds and EHO-compliant cleaning checks, ensuring any actions are followed up.
- Manage COSHH training and certification across all F&B departments.
- Order and store chemicals in line with legal and company requirements.
- Oversee the ordering of F&B products, working closely with chefs to ensure accuracy and efficiency.
- Ensure all deliveries are checked, signed off, stored correctly and rotated in line with stock control procedures.
- Manage refuse storage and removal in accordance with company standards and liaise with external contractors.
- Oversee Kitchen Porter payroll administration through Fourth, including daily close-downs, rota forecasting, payroll preparation, and the accurate recording of absences and holidays.
- Coordinate the maintenance of all culinary areas, equipment, fixtures, and fittings.
- Work closely with the Finance team to ensure all paperwork is accurate and submitted on time.
- Lead, motivate, and develop the Kitchen Porter team, including implementing a weekly training focus.
- Manage all Kitchen Porter shift cover requirements, including providing operational support when required.
- Ensure the Kitchen Porter team maintains the staff canteen, including cleanliness, stocking crockery and cutlery, and maintaining the staff coffee machine.
- Review weekly cleaning, pest control, and maintenance reports with the Senior Chefs, Director of F&B, and Restaurant General Manager.
- Manage labour costs in line with agreed budgets.
- Produce monthly reports on Health & Safety, COSHH, and Risk Assessment training compliance.
- Maintain kitchen due diligence records and ensure documentation is readily available.
- Carry out stock takes, including monthly crockery inventories and breakage reporting.
- Verify and sign off laundry counts.
- Conduct weekly checks and replenishment of first aid supplies.
- Support Housekeeping in maintaining the cleanliness of the loading bay, including jet washing when required.
- Ensure both you and the Kitchen Porter team maintain company uniform and presentation standards.
What we’re looking for…
- COSHH certified/ COSHH trainer is desirable but not essential
- Experience using stock system and goods receiving systems
- Experience using kitchen equipment and recommended cleaning methods
